Cupcakes were made for a certain birthday celebration. Vanilla. Light and fluffy. The only soggy bottoms had nothing to do with cakes. And smothered in homemade buttercream icing.
I had one yesterday and it was really nice.
However, as a Type I diabetic it pushed my blood sugar through the roof and meant I was pumping insulin in to my body through the roof!
It also means that I won't be touching the things today.
Such is life.
